2. Oil-free Spring Rolls

🍁🍂 It’s day 2 of #blogtober and I thought I would share with you my super easy recipe for guilt free Spring rolls 😊. These babies taste great as a snack or as part of a main meal. No oil and no egg means that they are actually healthy but taste just as good – bonus!

What you will need (to make 8):
– 1 carrot
-1/2 an onion
– 1 courgette
-4 sheets of filo pastry (jus rol filo pastry is 100% vegan and you can find it in any supermarket)
Preheat the oven to 180c (fan) or 200c (convection oven)

Step 1
Peel your carrot and onion. Chop the carrot and courgette in half so they are about 7cm long pieces. Finely slice all of the veg.

Step 2
Cut your pastry sheets in half so that you have 8 strips to roll your veggies with. Take two or three slices of each vegetable and place at the end of a pastry sheet and roll. Just fold the edges and wrap like you would with a tortilla/burrito so that nothing falls out. Repeat until all of the sheets are filled.

Step 3
Bake in the oven for 15 minutes. This will allow for the pastry to cook and the veggies to soften a little.

Serve with sriracha, sweet chilli sauce or soy sauce (all three are pretty good if you like the variety). I love a homemade takeaway ✌🏻️🌿

*If you’re like me and like to know what’s in your food, you will be happy to that these Spring rolls are healthy ones.
*Rewired isn’t going to count the calories in these for you because there aren’t enough in them to worry about.
*The ingredients in these Spring rolls have many health benefits and I will list just a few:
Carrots are a source of beta-carotene which is excellent for your heart and your eyes (it is sometimes used to treat age related macular degeneration).
Courgette is excellent for digestion as it is high in fibre. It has no saturated fat or cholesterol and is an all round gem for your health.
Onion is such an underrated food. It is so good for you. It can improve your mood, does wonders for your skin and hair and reduces the risk of many types of cancer – yay for onions!

I hope you enjoy making these little treasures. If I’m making noodles or a rice dish, they add a little variety and when cooking for others, it looks like you’ve made a massive effort when they actually only take about 20 minutes to make.
